Choosing high quality beans that we can't live without, we make cold brew in-house using cold process all the way. That means cold filtered water and refrigeration through out the entire brewing period. Once cold brewing is done, the coffee and water mix is triple filtered and charged with nitrogen then left to 'mellow out' for 24 hours before serving.
In order to make a great pizza, we had to learn from the best. Our man-cook was sent to learn how to make an authentic thin crust pizza from an Italian oven maker who shared his grandmother’s tips and recipes for the best Pizza. (who naturally pick up a few tips in the art of pizza making from his grandma). The only way to truly heat our oven is to use wood. This method gives superior heat over gas ovens and of course, the smoky aroma you can only get from burning wood.
Everyone loves the smell and taste of good barbecue cooking, whether it is during the summer or winter time. For that reason, we have decided to use a flame grill instead of the more traditional grilling methods. By using a flame grill, we can achieve the perfect maillard reaction and give our burgers and steaks that unique smoky flavor that can only be released when the oil and fat drip on hot fire.
